Whole 30 day 19

Headed out to sea world so we had quick omelets that Santos cooked up with spinach, bacon, sausage, and sweet mini peppers.
Lunch at the park was snacks that we had packed, Thai curry cashews, apples and almond butter, and carrots.
Dinner was “chili” I had put ground beef, sweet mini peppers, roasted red peppers, canned diced tomatoes, and sliced carrots in the slow cooker with chili powder, Cajun seasoning and s&p. it was delicious!


Jan 18

Breakfast was eggs and bacon and mini sweet peppers. Then had a cup of hot tea to calm my sugar cravings, late lunch was cauli-rice with egg and coconut aminos, topped with avocado. Served with a side of roasted broccoli, and sliced almonds

Dinner: more roasted broccoli, sweet potato rounds, and grilled Cajun ahi tuna steak with grilled pineapple and roasted red pepper salsa


Day 17 of whole 30, had this burger with no bun, bacon, lettuce, tomato, avocado for dinner. Don’t remember what I had for breakfast, I’m totally slacking on keeping my blog updated :-/

A bit late, but had an egg, hot dog, and sweet mini pepper scramble for brunch. Then had smoked ribs, spaghetti squash with homemade ranch and avocado for dinner

Day 15 whole 30

Well I guess I got a little too cocky with my fried eggs. Woke up early on day 15 and was sick to my stomach. Not sure what made me sick but I think it was an undercooked egg. I didn’t eat all day, just sipped water and finally had some shredded BBQ chicken and spaghetti squash with creamy avocado sauce for dinner

Meals are getting repetitive these days, especially breakfast and lunch. This is egg and mini bell peppers in a bacon basket, on sweet potato hash 

Dinner was delicious BBQ chicken thighs that I put in the slow cooker, didn’t last long enough to take a picture :-/

Day 12 hubby wanted to give it a go at paleo pancakes, so I let him while I got up and dressed. Then we packed up our hard boiled eggs, pumpkin brownies, and apples and headed out of town for my nephew’s birthday party. There was chili, and we served ourselves huge servings while avoiding the beans, not easy, but we did well.

Today I tried out paleotable’s paleo crunch. It was delicious, I did modify the recipe by subbing out soaked dates for the honey, I processed all the wet ingredients in my blender and added it to the but blend.
Dinner today was meatball’s from primal palate, I had hubby add the spices to the meat (unsupervised) and he over spiced it by about 2teaspoons of cayenne pepper. They were practically inedible :-/ served with a side of mini sweet peppers I grilled

Whole 30 day 11 and ranch/bleu cheese dressing recipe


mayo recipe
1/4c light tasting olive oil(regular and evoo would have too strong of a flavor)
1 eggs(room temp)
1.5Tbs apple cider vinegar
1tsp dry mustard
2tsp salt
1c light tasting olive oil
In a blender or food processor blend first 4 ingredients until well mixed. Then with it on medium, slowly drizzle in the remaining olive oil, slow stream is the key here, it should take a minute or two. Store in a jar or covered container.
For the ranch
.5c mayo
.5c coconut milk(canned full-fat, I promise there is no strong coconut flavor)
2tsp chopped dill(fresh or dried is fine)
1tsp plain mustard
1tsp apple cider vinegar or lemon juice
1 clove of garlic, crushed
Salt+pepper to taste
Whisk all ingredients in a bowl, I added tap or two of Tabasco for extra flavor, but maybe that’s just the heat-seeking Mexican in me

Paleo Pumpkin Brownies
15oz can canned pumpkin
2c almond butter(or any other nut butter)
2 eggs
3/4c dates(soaked in water for at least 1 hr)
2tsp baking soda
Place all ingredients in blender or food processor and blend until dates are incorporated.  Bake at 350 for 22-25 minutes or until toothpick inserted comes out clean in a 13x9 pan
